The château’s state-of-the-art winery sees the grapes vinified by parcel, using only gravity to move the fruit and its juice.nWith supervision from famed oenologist Michel Rolland, Château La Dominique’s wines are fermented in hi-tech thermo-controlled steel tanks to control each parcel of fruit independently. After malolactic fermentation in either tank or barrel, the wine is aged for around 18 months in French oak (between 50% and 70% new).nChâteau La Dominique 2014 is a powerful, silky wine with sweet dark fruit notes over underlying liquorice and coffee depths.
