A quality sparkling wine that is a superb vintage made by the traditional method. On the nose a touch of yeast, notes of raspberry and dry strawberry, with subtle savoury undertones adding complexity. Ideal with hors d'oeuvres and starters, great with fish, cheese and some red berry desserts. The hand-picked Pinot Noir was crushed then underwent a two day cold soak in stainless steel tank. It was cool fermented for around 14 days prior to malolactic fermentation. A varietal yeast was used for the first ferment and then the 18-2007 Champagne yeast for the second (in bottle). This wine is aged for 18 months to 2 years on the lees prior to disgorgement. It has 10g/l residual sugar.
