He has since expanded it to 120 hectares, and today is regarded as one of Chablis’ leading producers. Jean-Marc’s approach is one of minimal intervention in both vineyard and winery. Cultivation is organic in principle, with ploughing in place of herbicides, predators instead of pesticides, manure rather than fertiliser, and as little spraying as the grapes’ health requires. Winemaker Odile Van Der Moere joined Jean-Marc in 2007, sharing his philosophy of making wines with character, precision and freshness. The Chardonnay grapes for this wine came from 30-year-old vines on the western end of the Grand Cru amphitheatre, where the complex Kimmerigian soils give the grapes mineral qualities.
