Being higher up the slope and thereby cooler, Les Bidaudes doesn’t have Grand Cru status and is therefore better suited to Chardonnay. While whites from the Côte de Nuits are fairly rare, their distinctive character shines through in wines such as this. Winemaker Rotem Brakin had the grapes harvested by hand and pressed in whole bunches.
